Coconut Milk Pancakes {Gluten Free}

She has it covered with the photos and recipe for Coconut Milk Pancakes. Looks paleo safe to me. Lately we find that it is becoming difficult to join friends and communities and keeping with our paleo safe way of food, including food preparation. Because there are so many communities that do potlucks, or snacks or just plain dessert goodies, and we obliged in being polite (calling it our polite cheating) but there are just too many cheat opportunities. It’s not the temptation, that is not a weakness, it’s the idea of sharing food time together with others and wanting to be polite to the degree we can. I think it wise for us to start bringing along our own kinds of paleo safe foods, can share the experience of food with others, only a mild soapbox explanation of why we eat paleo when we are asked, and we are asked often. Our impassioned soapbox on the value and benefits of paleo might be too overwhelming (including the guilt inducing feelings people can get sometimes when made aware of what they are actually consuming), but then once we speak to how my husband is walking advertisement, in that he has lost 100 lbs since we’ve gone the paleo way of life, that becomes a ‘wow’ factor.

Thimble and Rose

Pancake day is tomorrow and as nearly everyone can whip up some regular pancakes we thought to give them a tweak Thimble and Rose style,and create something super yummy! We hope you will all try our recipe for Blueberry Coconut Milk Pancakes – Thimble polished off hers pretty quickly!


*1 cup Plain Flour + tsp baking powder  – We used Doves Gluten Free
*1 cup Coconut Milk
*1 free range Egg
*5 tbsp Milk – To loosen the mixture
*2 tbsp Caster sugar
*Handful Blueberries – Optional
*knob of Butter(for the skillet)


Beat egg and add all the other ingredients except for the blueberries. Continue to beat until a smooth batter is formed. This will be thick and resemble cake batter. Stir in the blueberries. Heat the skillet (or non stick fry pan). It should be nice and hot. Spoon on the batter,the size is up to you,flip when tiny…
