Coconut Milk Pancakes {Gluten Free}

She has it covered with the photos and recipe for Coconut Milk Pancakes. Looks paleo safe to me. Lately we find that it is becoming difficult to join friends and communities and keeping with our paleo safe way of food, including food preparation. Because there are so many communities that do potlucks, or snacks or just plain dessert goodies, and we obliged in being polite (calling it our polite cheating) but there are just too many cheat opportunities. It’s not the temptation, that is not a weakness, it’s the idea of sharing food time together with others and wanting to be polite to the degree we can. Our impassioned soapbox on the value and benefits of paleo might be too overwhelming (including the guilt inducing feelings people can get sometimes when made aware of what they are actually consuming), but then once we speak to how my husband is walking advertisement, in that he has lost 100 lbs since we’ve gone the paleo way of life, that becomes a ‘wow’ factor.
